Weekend Chef: Breakfast Cupcakes

You know us, we are food lover and cooking at home is culinary therapy for the stressed-out Agnes!

One casual day, Maurice was surfing reddit and found this awesome loving Breakfast Cupcakes and insisted Agnes should learn and bake it for him. Now Agnes proudly present to you the weekend chef recipe, The Breakfast Cupcakes!

Does our Breakfast Cupcake make you hungry? It better do because that means Agnes succeeded and must have looked delicious!

First step; butter the sides of the baking cup and use the little baking cups to stencil the base. The base is slice of bread.

Second step; you have to pan-fried the bacon to a little cooked state before you line them up at the side of the baking cup.

Third step; dice portobello mushroom, capsicum, bell paper and favour it with spices. We used mixed herbs which consist of oregano and cajun. Sauteed it on pan with olive oil.

Forth step; Add a table spoon or so (depending on the height of your baking cup or tray) of the mushroom filling to the baking cup.

Fifth step; Crack an egg into the baking cup and sprinkle herbs (mixed herbs, oregano or etc is fine).

The FINAL step; bake it in the oven for 20 minutes at 200 degree celsius.

In all honesty, this is the easiest recipe we have ever tried. For kitchen dummy, here’s your way out to have an awesome looking and super tasty food to present to whoever you are trying to.. impress.

Before I end off.. Hoorayyyyy to public holiday tomorrow! Happy labour day, everyone! It’s another good day for us to relax ourself and I’ll be probably trying out a new recipe (wonder what!) and enjoying the culinary therapy.

Weekend Chef — Vanilla Strawberry with Chocolate Muffins

Fun times over the weekend while Maurice and I dated over home-made chocolate muffins with vanilla coated strawberries.

Well, to be honest our baking skills is a little lacking, so we started small by getting a Moist Cake mix off the shelf. We followed the instruction, but pouring them to a muffin cups instead of cake mould.

Once they are done, the muffins’ shape are a little off. Probably because our tray is uneven. But not bad for first try!

The cake turns out very light just the way we like it. We topped it with strawberries for that extra fruity taste.

For the other variation, we put a light whipped cream between the strawberry. Delicious! Not to mentioned we actually whipped the cream ourselves. : p

So that’s all for now, next step would be muffins from scratch! : )

He cooks: Sautéed Mushrooms with Cajun & Rosemary, Prata topped with Cheese, Scrambled Eggs and Spicy Tuna

Saturday Brunch Recipe — Sautéed Mushrooms with Cajun & Rosemary, Prata topped with Cheese, Scrambled Eggs and Spicy Tuna. It’s a good day for awesome meal.

We woke up feeling hungry, and we need to come up with a meal. Fast! So we took a look what’s inside the fridge and saw prata, mushroom, eggs, milk, cheese, and canned chili tuna. So we decided to cook our tried-and-true recipe of mushroom cheese prata, with additional sides of scrambled eggs and chili tuna.

Prata takes the most time to cook, so we cook that first. We love crispy prata. We keep flipping the prata until it swelled up with air.

Next was the mushroom. It was easy enough. Well-cut mushrooms, olive oil, cajun seasoning — then throw everything onto the pan. Continue stirring until it sweats slightly. We love our mushroom not to be overcooked.

I prefer to have my mushroom and cheese to be sandwiched between a pair of pratas, and Agnes prefers her mushroom-cheese to be inside-out. Both are a lovely combination. Yummy!

He cooks: Mozarella Cheese with Prata

This sunday brunch at home. Mozarella Cheese with Prata. Topped off with scrambled egg & apple baked hams.

Maurice’s sis bought us Mozarella from Rome and it was awesome. Light, chewy and without the quiet taste of cheese. We loved it! And surprisingly, it was filling. We were rather amazed after the brunch that we felt really full, the portion was half the size what we usually ate!

Have we ever mention how much we love fluffy and light scrambled eggs? No matter how sinful people say this is, we will never give up on this. Sprinkle some pepper and salt, scrambled eggs make my day bright and energetic!

Looking forward to the next weekend for more good home-made brunch. Weekend is for good breakfast!

He cooks – Maurice’s love for Belgium Waffles

Maurice has always been a big fan of waffles, specially Belgium Waffles. He’s always searching for the best waffle maker machine. Seriously, I’m not kidding on this. He has over the years purchased a few models, tried different recipes and so on and so forth but well, he was not pleased. Well, ask about the fate of the machine.. It’s sitting comfortably in the storage area. Unfortunate ending.

So he has been reading and searching online for the so called “good” waffles maker. He’s even proposing to me that we should buy an industrial waffle maker! Almost died hearing that. First, I can imagine the cost of the item and then, the electrical bill. I’m practical and very realistic. Haha! Finally, he found something else. Kind of practical, easy to keep and most importantly, non-electrical! And that’s The NordicWare 15040 Cast Aluminium Stove Top Belgium Waffle Iron. Raving about it, telling me about the reviews he read online and etc. Of course, I don’t buy that. But well, it’s just like how a guy failed to convince and stop a woman from buying shoes despite she has plenty. I can’t stop Maurice from purchasing too. Haha.

It’s a tad heavy for a lady to use so I volunteered to help out preparing the ingredients instead.

4 eggs (white and yolk separated), a cup of plain floor, a cup of low fat milk, half teaspoon of salt and unsalted butter.

Yes, we did a manual whisk for the egg white. We didn’t have a egg whisker at home and it’s pointless imo to buy an electronic whisker at the moment. Whisking egg manually is tedious, Maurice was saying he googled about that and people online have been saying “Forget it!” Well, hard work does counts.. sometimes!

That’s how it looks like on the stove. The turn-out of the waffle is excellent! Beautiful golden brown! I’m very impressed especially this is our first try and we succeeded!

Overall, I’m pleased with the iron waffles maker. It cooks the waffles in 4 minutes! Furthermore, it comes with a 3 years warranty.

Oh! To add on, Korea Strawberries are awesome. Sweet and not that sour, just the kind of strawberries I would love to snack on! But it’s a little pricey, can go up to $8SGD per box with about 16 pieces in it. I have been wanting to try it since the day my colleague introduced to me. (Okay, that was months back..) And  I finally bought it but at a discounted price as NTUC Fair Price was having a promotion, 2 boxes for $8SGD. It’s a steal! Now I wish I bought more then.
